Ricetta del Mese: Rigatoni Bolognese
As we enter fall enjoy one of our most popular dishes that is true comfort food.
Rigatoni Bolognese, serves 4
2 Garlic Cloves, peeled and chopped 1/2 Onion, finely chopped 1/2 lb of 80/20 Ground Beef 1/2 tsp of a finely chopped mix of Rosemary , Thyme , Basil 2 tbsp (or soup spoons) of Olive Oil 1/4 cup of White Wine 2 cups of Roma Tomatoes, chopped 1 1/2 cups of Quattro's home made demi-glace* Salt & Pepper to taste
In a large pan heat up olive oil over medium high, then sauté garlic and onions together until golden. Add ground beef and fresh herbs and cook, stirring frequently, for about four minutes. Add the wine, tomatoes, salt, pepper and demi-glace (or stock). Let cook for 5-8 minutes and serve with your favorite pasta.
*Quattro's demi-glace is made in the classic tradition, but for an easy substitute you can buy a ready made demi-glace product from stores or Amazon. Experiment to find the one that suits your tastes and dietary preferences. Or a high quality beef stock can be used to complete the recipe, albeit the sauce will be thinner.
